This is the first time that we’re offering a coffee from Peru, and we’re proud to support this emerging specialty coffee-producing region. This coffee comes from a farm called Finca El Barejon, run by husband-and-wife duo Yonal and Imelda. There are currently 3 lots in this farm with all of them dedicated to growing the Bourbon variety.
Hand-picked cherries undergo a 24-hour dry fermentation in large tanks. They are then pulped, washed, and dried over 15 days in solar driers.
